1 shallot, roughly chopped
2 cloves garlic
1/4 cup cilantro leaves
1/2 teaspoon granulated sugar
1/4 teaspoon salt
juice of half a lime
14 ounce can of diced or whole tomatoes, with liquid
8 ounce can of tomato sauce
-Remove the seeds and white ribs from the pepper and cut the jalapeno into 4 pieces.
-Use a food processor and blend the jalapeno, shallot, garlic and cilantro.
-Pulse it a few times.
-Add sugar, salt and lime juice.
-Pulse until finely chopped.
-Add tomatoes and tomato sauce and pulse until your desired smoothness.
