Ingredients:
one pound of ground beef
1 medium onion, chopped
1 package of taco seasoning
1/4 tsp. turmeric (optional, but I like it in rice dishes)
1 tsp. dried parsley
10 ounces of can diced tomatoes with green chilies, undrained
2 cups of cooked long grain rice
1/2 cup of shredded Queso cheese or Colby jack cheese

Procedure:
In a large skillet over medium high heat, brown the ground beef, breaking it up with a wooden spoon as it cooks. Drain off any excess grease. Add in the onion and cook for 5 minutes until tender. Reduce heat to medium and add the taco seasoning and turmeric, stir to combine. Add the canned tomatoes with juice and stir well. Stir in the cooked rice, then add the cheese and parsley and combine well. Remove from heat. Serve alone with tortilla chips or wrap in a flour tortilla.
